Oyakodon Recipe – Japanese Rice with Chicken and Eggs
The first Japanese rice recipe we would like to introduce is a kind of donburi that only takes about 30 minutes and is called Oyakodon . It also contains chicken and eggs which explains why its name translates as “mother and child”. 2 cups white rice (cooked in advance as described above)
1 cup (240 mL) homemade dashi (konbu and bonito broth)
1 tablespoon soy sauce

Oyakodon Japanese Rice Preparation Steps
Pour the dashi, soy sauce , sake and sugar into a small saucepan and bring to a boil. Maintain a high heat, add sliced onion and cook for about 5 minutes or until onion is tender, stirring occasionally. Add chicken pieces and cook, stirring constantly, until chicken is cooked and broth is reduced to about half.
From 5 to 7 minutes will be enough for the chicken legs and 4-5 minutes for the breast meat. The following steps are to add half of the finely chopped shallots, taste the broth and season with more soy sauce or sugar if necessary. In general, we put on a balanced salty and sweet flavor, but you can change the taste according to your preferences.
Then, reduce the heat and beat the eggs slightly (eg with chopsticks) in a bowl. Slowly pour the eggs gently into the slightly simmering pot, trying to distribute them evenly. Put the lid on and cook to taste. Usually, about 3-4 minutes are enough for liquid-yellow eggs or 5-6 minutes for soft-boiled eggs.
To serve, transfer each serving of Japanese rice to a large bowl and garnish with the egg and chicken mixture. Also add some of the excess broth to the pan. Finally, depending on your taste, you can add an extra raw egg yolk to the center of each bowl. Sprinkle with the rest of the chopped shallots and shichimi tōgarashi spices and serve immediately.
