Ingredients for 4 persons :

  • 350g of semolina
  • 3 lemons
  • 5cs of olive oil
  • 6 ripe tomatoes
  • 2 onions
  • 1 cucumber
  • 1 red pepper
  • 50g of currants
  • 1 bunch of fresh mint
  • Salt

Preparation:

First of all, you have to rehydrate the grapes in a bowl of hot water. Put the semolina in a salad bowl. Sprinkle with the juice of lemons, olive oil and a little salt. Mix well. Cut the tomatoes and remove the seeds. Mix roughly with the robot. Add them to the semolina. Chop the onions with the mint leaves and add them to the semolina. Mix well. Peel and cut the cucumber. Cut the pepper into cubes. Add the vegetables to the bowl. Mix well. Cover the salad bowl with film and let it cool for a few hours.

Ingredients for 4/6 people

  • 1 cup of quinoa
  • 1 ½ cup of poultry stock
  • ½ cup sweet corn seeds
  • 1 ct salt
  • 1 red pepper cut into cubes
  • 1 carrot, peeled and grated
  • 1 large garlic clove, finely chopped
  • 2 cups of shredded Kale leaves
  • ½ cup chopped Italian parsley
  • ½ cup chopped fresh cilantro
  • 1 tablespoon of olive oil
  • 1 ct ground cumin
  • 1 tsp of hot pepper sauce
  • ½ tbsp freshly ground black pepper

Preparation:

The first step is to prepare quinoa. Rinse the quinoa in a strainer under the cold water tap. Heat a saucepan with the chicken stock. Once the bottom has boiled, dip the quinoa and mix. The cooking time is about 12 minutes. You have to turn regularly so that the quinoa does not attach to the bottom of the pan. Once the quinoa is ready, drain it and keep it cool. Place the corn seeds, chopped pepper, carrot, garlic and Kale leaves in a large bowl. Mix well. Add quinoa and spices. Mix and add the chili sauce and olive oil. Serve immediately or keep cold.

  • 1 tomato
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • Sauce raw vegetables
  • Chopped parsley

Preparation:

Cook the semolina in boiling water with a pinch of salt. Drain the peas. Chop the parsley. Wash and cut peppers and tomato in small cubes. Mix together the vegetables, swollen semolina, chopped parsley and shrimp. Season with sauce crudités. Serve as fresh.

  • 3 bunches of parsley
  • 1 bunch of fresh mint
  • 2 onions
  • 2 to 3 tomatoes
  • 3 tablespoons of bulgur
  • The juice of 3 lemons
  • extra virgin olive oil
  • Salt

Preparation:

Cook the bulgur. Wash, dry and finely chop the leaves of the herbs. Put the herbs in a salad bowl, add the tomatoes washed and cut into small dice. Cut the onions and add them to the herbs. Add bulgur, lemon juice and salt. Pour 8 tablespoons of olive oil and mix again. Marinate at least 1 hour.
